When you are following an autoimmune protocol, food choices are limited. Try this banana bread to shake things up a bit in your meal plan. This is one even the kids will gobble up! Paleo and Autoimmune friendly.
Ingredients
- Banana (medium)
- 1 cup Cassava Flour
- 1/4 cup Coconut Flour
- 1/3 cup Coconut Sugar
- 3 tbsps Coconut Oil (melted)
- 2 tbsps Coconut Milk
- 1/2 tsp Baking Soda
- 1 tsp Lemon Juice
- 1 tsp Alcohol-Free Vanilla
- 1/4 tsp Sea Salt
- 1/4 cup Organic Dark Chocolate Chips (dairy free for Paleo, omit for AIP)
Directions
Heat oven to 350. Mash bananas in a medium bowl.
Add all of the ingredients except chocolate chips and mix just till blended. Add coconut milk by the tablespoon and only add another if it is very dry still.
Once combined, add chocolate chips (omit for AIP).
In a parchment lined loaf pan or lined muffin cups, add mixture. Bake for 45 min for the loaf, or until center has risen slightly and the toothpick comes out clean. Also works for muffins.
