Summer is coming quick and with it comes the desire for more fresh salads! Today’s recipe is Paleo, AIP and even Keto (if you ditch the maple syrup)! This salad makes for a great lunch or an easy picnic dish, enjoy!
Ingredients
4 pieces Prosciutto (sliced into strips)
4 cups Mixed Greens
1/2 cup Carrots (grated)
1/2 cup Beets (grated, pickled or beet slaw recipe)
1/4 cup Walnuts (remove for AIP)
Dressing:
1 tbsp Extra Virgin Olive Oil
1 tsp Dijon or Whole Grain Mustard
1 tsp Maple Syrup (or 2 drops stevia for keto)
1/4 tsp Sea Salt & Black Pepper (to taste)
1/8 tsp Onion Powder
1 tbsp Lemon Juice
Directions
- Add lettuce to bowl and add desired toppings over. Proscuitto can be changed for another protein like bacon or chicken.
- In a separate small bowl, mix all dressing ingredients, starting with olive oil. Drizzle over top of the salad and toss well. Add feta if you tolerate cheese!
