You have to try these Keto/Paleo friendly meatballs!
- 1 lb ground Chicken (or turkey)
- 1 tsp Italian Seasoning
- 1/2 tsp Sea Salt
- 1 tbsp White Onion, diced fine
- 1 clove Garlic, Crushed
- 1 egg, whisked in a bowl
- 1 heaping cup Pork Rinds, powdered in a high speed blender
- 1 cup Sugar Free Marinara
- 1/2 cup Mozzarella, grated
- Parmesan
- Turn oven to 375. In a medium bowl, combine the ground meat, seasoning and salt, white onion, garlic. In two separate bowls, put egg in one and pork rinds in the other.
- With a medium scoop, scoop the mixture and drop into the egg. Cover completely and drop into the pork rinds. Cover completely and then drop onto a parchment covered cookie sheet.
- Repeat until meat mixture is gone and then place the balls in the oven until cooked. About 20 min or until golden.
- Heat marinara in a pot on the stove.
- When meatballs are done, dish out and pour marinara over top. Sprinkle with mozzarella and parmesan.
- You can serve this with spiralized zucchini or spaghetti squash. Another option would be to put the meatballs in a casserole dish with the marinara and sprinkle cheese on top and broil till cheese is bubbly.
Hi Is there any other substitute that can be used for the pork rinds? I can not eat pork
