1 lb. of ground meat of your choice
1/2 cup cooked quinoa
Fresh or dried seasonings cilantro, mint, parsley, oregano
1 clove garlic
1/2 teaspoon cumin and onion powder
Salt and pepper to taste
6 cups of beef broth
1 can diced tomatoes
1 onion chopped fine
1 large carrot grated
2 potatoes cubed
1 cup of finely chopped kale
Cayenne and chilli powder to taste
Juice and zest of one lime
Combine meat and other ingredients, make small bite size meat balls. Boil pot of water and cook a third at a time for 5 min. This will release some of the fat from meat.
Heat broth and tomatoes, add rest of ingredients except lime and cilantro. Simmer until veg’s are cooked. Add meatballs to reheat. Just before serving add lime and cilantro.
