Mongolian Beef Ginger Stir Fry that’s easy to make in just 25 minutes, crunchy, tasty, and full of garlic and ginger flavors you love from your favorite Chinese restaurant.
Mongolian beef normally has just beef and sauce but I love to add the veggies and peppers right into the mixture for a tasty and healthy stir-fry! You may use almost all kinds of vegetables.
Gluten-free, Paleo, and Whole30 friendly!
Serves: 4 Total Time: 25 minutes Cooking Time: 10 minutes
1 lb. boneless beef, sliced
3 garlic cloves, minced
3 inch long ginger, thinly sliced
2 carrots, peeled and sliced
2 green bell peppers, seeds removed and sliced
Salt and black pepper to taste
2 tablespoons coconut aminos
1 tablespoon lemon juice
2 teaspoons olive oil
- Marinate the beef with all the marinade ingredients and let it set for 20 minutes.
- In a skillet, heat 1 tablespoon of coconut oil over medium heat and stir fry beef with the marinade until no longer pink. Keep aside.
- Add a bit more oil and fry ginger, garlic, green bell peppers over medium heat until fragrant. Season with salt and pepper.
- Now add beef back to the pan and mix everything well.
- Serve and enjoy.
