If you are following a low carb/Keto diet this No-Tato Salad hits the spot! Bring to your next summer BBQ!
- 1 Head Cauliflower (medium)
- 6 Egg (hard boiled and cooled)
- 2 stalks Celery
- 1/4 cup Pickle (diced)
- 1 Radishes (diced small)
- 1 tbsp Chives (chopped fine)
- 1 tbsp Fresh Dill (chopped fine)
- 1/4 cup Mayonnaise
- 2 tsps Grainy Mustard
- 1 tbsp Pickle Juice
- 1/4 tsp Sea Salt (to taste)
- Break down cauliflower and boil or steam until very soft. Cool.
- Once cauliflower is cool, chopped eggs and add all ingredients into a medium bowl. Mix till well combined and all yolks are broken down.
- Serve with your favourite grilled dish!
