Lemon Greek Yogurt Pie with Blueberry Compote
Oh my gosh this pie is amazing!! I am aways in search of gluten free, low sugar dessert recipes that still taste amazing and this is one of those recipes. The full fat Greek yogurt has about twice the amount of protein as traditional yogurt. The almond pie crust is loaded with vitamin E and heart-healthy monounsaturated fats. Trust me nobody will miss the gluten and processed sugar in this pie!
1 cup plain high fat Greek Yogurt
1/4 cup raw honey
Zest of one lemon
1/2 cup fresh lemon juice
2 large free range eggs
Prepared almond pie dough (see below for recipe)
1 1/2 cups fresh or frozen blueberries
1/4 cup water
2 tablespoons maple syrup or honey
1/2 tsp cinnamon
1 1/2 teaspoon cornstarch or arrowroot powder
Almond flour pie crust (gluten free)
2 cups almond flour
2 tbsp cold unsalted butter or unmelted coconut oil
1 tbsp honey
1 large free range egg
1/4 tsp salt
In a food processor combine all the ingredients until it begins to clump together.
Using your fingertips, press dough into a lightly greased 9 in pie plate.
Tips: Almond flour is susceptible to burning. You can help this by placing pressed crust into the freezer for 30 minutes before filling and baking. When substituting crust for regular pie crust recipes reduce temperature by 50 F from what the recipe calls for and bake for a longer period of time.
Preheat oven to 300 F and set the oven rack in bottom third of oven
In a large bowl whisk together yogurt, honey, lemon zest, and lemon juice. Stir in eggs, one at a time.
Add yogurt mixture to prepared pie crust and bake until center is set about 30-35 minutes. Let Pie cool at room temperature for 30 minutes and then chill in refrigerator for at least 1 hour before serving.
To make blueberry compote:
Combine blueberries, cinnamon, water, maple syrup or honey in a medium sizes sauce pan. Bring to a boil, reduce heat and simmer over medium-low heat for 20 minutes stirring occasionally. Dissolve cornstarch or arrow root powder in 1 tablespoon water, stir into blueberry mixture and heat for 1minute, or until thickened.
Serve pie with blueberry sauce poured on top.
