Recipe: Gluten-Free Slow Cooker Chicken and Wild Rice Soup
Slow cooker Chicken and Wild Rice Soup is a nutritious, easy and uncomplicated slow cooker recipe for busy days. Just add all the ingredients in the slow cooker and let it cook! Rich, delicious, and very satisfying, it’s a cold-weather favorite without a doubt. Make it Paleo, Keto or Autoimmune friendly by substituting the rice with cauliflower rice or diced sweet potatoes!
This Slow Cooker Chicken and Wild Rice Soup is the sort of meal I can eat all the time. I hope you like it just as much as I do!
1 lb. chicken breast, cut in pieces
6 cups chicken broth
¾ cup wild rice
2 tablespoons butter
½ small onion, minced
2 garlic cloves, minced
2 carrots, sliced
2 celery stalks
2 bay leaves
½ teaspoon thyme, dried
¼ teaspoon sage, dried
¼ teaspoon thyme, dried
Salt and pepper to taste
In a bowl, add all the ingredients except wild rice and broth. Mix well.
In a slow cooker, add the chicken, broth, and rice (or sweet potato) and cook on low heat for 4 hours or until chicken is cooked. Rice should also be cooked.
Now shred the chicken and stir back into the soup. Soup will thicken once cool.
