Who says summer can’t be full of healthy meals that still taste amazing?
Today I am sharing with you two of my favorite summer recipes!
The first is a delicious pineapple chill smoothie – a perfect breakfast or mid afternoon snack on a hot summers day!
Second, my all time favorite salad that I created about 15 years ago for my sister’s restaurant (which was always a huge seller) The Fiesta in your Mouth Salad – It’s bright, colourful and fresh with a little heat to fire things up – a sure fire hit for any BBQ! Who says summer can’t be full of healthy meals that still taste amazing?
Pineapple Chill
- 1 medium frozen banana, broken into chunks
- ½ cup frozen pineapple
- 1 tbsp hemp seeds
- ¼ tsp grated orange zest
- Pinch of ground cinnamon
- 3/4 cup unsweetened coconut milk
- ¼ cup ice
Blend and enjoy
Fiesta in Your Mouth

1 head of romaine diced

2 tablespoons chopped red onion

2 tablespoons balsamic vinegar

2 tablespoons chopped cilantro

1/2 large jicama diced
-
2 carrots peeled and shredded
-
2 cups diced seedless watermelon

1/2 cup feta cheese (optional)
Dressing
-
6 tbsp fresh squeezed lime juice
- ¼ tsp freshly ground black pepper
- ½ tsp each ground cumin and chili powder
- 2 tsp honey
- 2 tbsp olive oil or avocado oil
Instructions
About an hour before preparing salad place chopped red onion in a small glass bowl cover with balsalmic vinegar and marinate till salad is ready at least 1 hour. Combine all salad ingredients in a bowl.
In a small bowl, whisk together all dressing ingredients. Pour over salad. Mix well and serve.
Optional: Make it a meal and add grilled chicken, steak or prawns!
