If you want a healthy, yet creamy, pumpkin soup full of flavour and spice try this simple and tasty Thai inspired recipe.

8 cups pumpkin, peeled and cubed
3 cups vegetable broth
2 tablespoons organic fish sauce
1 red onion, chopped
2 tablespoons ginger, grated
3 garlic cloves, chopped
1 red chili pepper
1 can of coconut milk
2 green chilies, chopped
2 tablespoons lime juice
In a slow cooker, add pumpkin, red chili pepper, ginger, garlic, and onion. Mix in fish sauce and coconut milk.
Cover and cook on low heat for at least 6-7 hours.
In a blender, blend the mixture until smooth. Mix in lime juice.
Serve after garnishing with coconut milk and chopped green chilies.
