Everyone expects turkey at Christmas, but you can really impress your guests with this grilled Tuscan Style Turkey, seasoned with fresh herbs. This recipe is Gluten-Free, Paleo, Autoimmune, and Ketogenic.
1 whole turkey
5 tablespoons coconut oil
1 tablespoon coconut oil, melted
4 tablespoons parsley, chopped
1 tablespoon thyme, chopped
2 tablespoons rosemary, chopped
2 tablespoons lemon zest
Spatchcock the turkey. Loosen the skin over breast and flatten a tablespoon of coconut oil in between the skin and breast meat.
Mix together the herbs, 1 tablespoon coconut oil, and lemon zest in a bowl. Rub the turkey all over with the herb mixture and let it set for 1 hour at room temperature.
Preheat the grill to 425 F.
Transfer the turkey to the grill so that the turkey is skin side up and the breast is over the coolest part of the grill. Close the cover and grill the turkey until the breast reaches 150 F and the thighs reach 165 F for almost 1 hour.
When the turkey is done, transfer it to a cutting board and let it rest for 20 minutes.
